Vacation is now a memory. School supplies have been purchased, open houses attended, and soon (if not already) that first school bell will ring. The Kimmswick 5K is almost here, and we’re looking forward to seeing you there to help us fight against ALS. The Solar Eclipse Experience Kimmswick (SEEK) will be here next week, and we simply cannot wait!

What does all this mean? Summer is winding to an end, my friends. With the end of summer, we pick the last of the delicious garden veggies, save a few pumpkins and squash.

If you’re wondering what to do with the abundant harvest, I have an idea for you. This delightful summer salad is sure to please.

Marinated Garden Salad

2 cups Miracle Whip

2 TBS. red wine vinegar

¼ cup granulated sugar

5 slices cooked bacon, crumbled

2 cups cauliflower

2 cups broccoli

1 cup tomatoes, chopped

1 cup grated cheese.

Blend Miracle Whip, vinegar, sugar and bacon in food processor. Combine vegetables and cheese in serving bowl. Pour dressing over vegetables. Mix well and marinate overnight.
