The trees are beginning to bud, the daffodils are blooming, and we are enjoying some absolutely beautiful days! Believe it or not, today is the last day of March. As we celebrate spring, we also celebrate Easter. This Sunday, families everywhere will gather to enjoy time together, which is by far my favorite thing to do!
What are you bringing to the table for this holiday meal? I hope you answer laughter, joy, and peace, along with a Blue Owl dessert (order quickly). As my Easter gift to you, I’d like to share a recipe that will delight your family at brunch or dinner. Please enjoy!
1 medium onion, chopped
2 TBS. butter or margarine
1 16-oz can stewed tomatoes, drained
2 10-oz packages chopped spinach, cooked and well drained
1 cup bread crumbs
¼ cup Parmesan cheese
2 eggs, beaten
Sauté onion in butter or margarine. Place stewed tomatoes in 9×9 inch casserole. Mix spinach, sautéed onion, bread crumbs, cheese and eggs together. Spread over stewed tomatoes. Season with garlic salt. Bake at 35 degrees until heated through, approximately 30 to 40 minutes. Serves 6.
