I have always said that food is less about eating and more about family and friends gathered around the table sharing good times and memories with one another. It was with these thoughts and feelings that I created The Blue Owl – a warm and friendly place that welcomes our guests into “our home” . . . and, we offer our guests delicious home cooking and a fabulous selection of homemade award winning desserts like the Levee High Caramel Apple Pecan Pie, Gooey Butter Cheesecake, and my personal favorite – Coconut Cream Dream Cake.
The Coconut Cream Dream Cake holds a special place in my heart as I made it several years ago for my Mom’s 80th Birthday celebration in Texas. I literally carried the cake on the plane with me to Texas! Our entire family gathered to celebrate my Mom on her special day. We all had such a wonderful time! Everyone loved the cake, and begged for the recipe! Each time I bake this cake, it brings tears to my eyes, as I remember the good times when Mom was still with us, and it brings great joy to my heart, knowing how much she enjoyed spending that day with her family and sharing her delicious birthday cake with everyone!
I love to cook for family and friends! Providing food for their nourishment and enjoyment brings happiness to my heart. I tend to show up at every family celebration with food, no matter where that celebration may be. I have passed through airport security with several tiers of wedding cake, assorted pastry trays and cookies (for my Mom and Dad’s 50th Wedding Anniversary Celebration in 2000), as well other goodies, including the Blue Owl’s Chicken and Dumplings, Fried Chicken, Mashed Potatoes, Pies, Cookies, and Cheesecakes for my Dad in Texas! Southwest Airlines is the best!

Coconut Cream Dream Cake
1 1/2 Golden Butter cake mixes
1 stick of butter (soft not melted)
1 1/2 cups water
1 Tbs vanilla
Mix together in mixer and spread evenly into 3 9inch round pans. Bake for 30 min or until golden brown in a 350 degree oven.
1 1/2 cups sugar
3 cups sour cream
4 1/2 cups coconut
Mix together and spread between layers and all around the outside of cake. Sprinkle with coconut.
