I wanted to share a recipe with you today, and according to my precious 15 year old grandson, Brett, my Spinach Artichoke Dip is his “Favorite dip in the whole wide world!”
Years ago, I was at a restaurant and we ordered a Spinach Artichoke Dip appetizer. It was so delicious, and I couldn’t wait to figure out how to make it at home. The first time I made it was for our family, and they loved it!!! Then I began to make it each time we had a Staff party. It has since become a “must” at every get together. In fact, whenever we are having a celebration, I am asked if I am making the Spinach Artichoke Dip!
One Thanksgiving morning, I was making a huge bowl of dip to share with our family and the Staff. Just to give you an idea, I used three- 3 pound blocks of cream cheese-9 pounds for this particular batch!! My Grandsons, Brett and Ryan, had spent the night, a tradition the night before Thanksgiving, so they could see the meal being prepared, and wake up to the wonderful aromas of the turkey baking in the oven on Thanksgiving morning! Brett was 4 years old at the time. He came down the stairs that morning and looked at the huge bowl of dip. He walked over to the counter and picked up the heavy bowl of dip and said, “Thank you, Grandma, for making my breakfast!” This is one of my favorite memories from years ago!
We do not have the Spinach Artichoke Dip on our menu, but we often serve it as an appetizer for our Karaoke Nights or Evening Concerts. The recipe is in one of my favorite Blue Owl Cookbooks, “Seasoned With Love,” dedicated to my wonderful husband, Jerry. I will share the recipe with you so that you can make it at home, and see if your family and friends do not agree that it is their “Favorite dip in the whole wide world!” Enjoy and remember that “Dreams Really Do Come True!”
Brett’s Favorite Spinach Artichoke Dip
4 Tbs margarine
1 small onion, chopped
3 fresh garlic cloves, minced
2 cups artichoke hearts, chopped
3 – 8 oz packages of cream cheese, softened
½ cup sour cream
2 Tbs mayonnaise
¼ cup Parmesan cheese
1 tsp garlic salt
1/2 tsp garlic powder
Dash of salt
2 lbs fresh spinach, cooked and chopped
Sauté onion, garlic, and artichoke hearts in margarine until soft and tender. Soften cream cheese in microwave. Remove and add sour cream, mayonnaise, Parmesan cheese, garlic salt, garlic powder, and salt. Mix well. Add sautéed onions, garlic and artichoke hearts to cream cheese mixture. Mix well. Stir in spinach. Serve warm with tortilla chips. Enjoy!!!
