Don’t you just love summer? One of the things I love the most about summer is the many gatherings: barbecues, parties, festivals, weddings, graduations, picnics, and more. I’m sure you know by now that I enjoy spending time with friends, family, and community. Of course, no gathering is complete without delicious food. Haven’t you heard that a party without a cake is just a meeting?

I have a special treat today for my friends who do take special delight in creating masterpieces in their own kitchen. I hope that you enjoy this recipe for my very own Texas Sheet Cake, which serves a large group. You can find this and many other recipes in our Baked With Love cookbook.

Texas Sheet Cake

2 cups flour                    2 cups sugar                        

2 sticks butter                1 cup water

4 T. cocoa                       ½ cup buttermilk

2 beaten eggs                1 t. baking soda

1 t. vanilla 

Sift into a large mixing bowl the flour and sugar. In a saucepan over medium high heat, melt together and bring to a boil the butter, water and cocoa. Add liquid mixture to flour mixture and mix well. Add buttermilk, eggs, baking soda and vanilla. Pour into greased 15×11 inch cookie sheet or jelly roll pan. Bake at 400 for 20 minutes. Remove from oven and spread with icing while cake is warm. 

Icing:

1 stick butter                   6T. milk

4 T. cocoa                        1 cup chopped pecans

½ t. vanilla                    1 box (16oz) powdered sugar

Melt and bring to boil the butter, milk and cocoa. Remove from heat and pour into a small mixing bowl. Add powdered sugar and mix until smooth. Makes 36 2-inch squares.

You can serve this rich, delicious cake with a scoop of ice cream or a hot cup of coffee. Enjoy your time gathering with family and friends, who will no doubt dream of your next party filled with great food! They will be so happy to always remember that Dreams Really Do Come True.
