The temperature is soaring, and all the sights of summer are around us – families are heading to the pool or the beach, children are playing in the sprinkler, and you can count on long lines wherever ice cream is being served. Nothing says “summer” like this recipe from our Luncheon Favorites cookbook. It’s no-bake, cool, refreshing and a real crowd pleaser!
Large package Oreos, firmly crushed
8 oz. cream cheese
1 stick butter
1 cup powdered sugar
16 oz. container of Cool Whip
2 small packages French Vanilla Instant Pudding
1 ½ cups milk
1 tsp. vanilla
Spread half the Oreo crumbs in the bottom of a 13×9-in pan.
Mix cream cheese and butter until creamy. Add powdered sugar. Fold in Cool Whip. Set aside.
Mix together pudding, milk and vanilla. Let set a few minutes and fold into the cheese mixture.
Pour filling into crust. Spread rest of Oreo crumbs over top. Decorate with Cool Whip and Oreo halves. Chill.
